Double click on the name of the Album to edit the name - these are the light blue Albums.  Use the smiley face under details to set the Album cover.

The set of Virtual Albums (gray) are generated automatically as you add/create new albums - these can not be edited or renamed.
Recent 15 = last 15 photos you've added across all you albums
Top Rated = top 15 photos as rated by your tab members
Random = 15 random photos selected across all your albums
Search Results = photos that meet your search term

When you exit the full screen album, you can set which Album is displayed in the Tablet View by using the customize menu in the top right corner of the tablet (little down arrow).
